Re: 3cm granite backsplash
We typically schedule two visits, one for the tops, then another for full-height backsplash.
That way we can measure and account for any shimming/leveling that might be required.
We usually leave about 1/8" short of upper cabs to allow some room for installation.

Re: 3cm granite backsplash
Install the tops then make templates with the outlets and size then make a second trip to do full height splash.

Re: 3cm granite backsplash
It depends on the layout. If there are walls or panels on both sides you can install the splash first and then butt the top up to them. This makes it so that you can usually install everything in one trip. The downside is that if the back of the top isn't perfectly straight and the splash perfectly straight then you're going to have gaps.
We prefer to measure the splash after the tops are installed. We also bevel the back of the top edge so that when you're tipping the splash into place there is a little extra clearance.

I do like Tony does. We also back bevel the splash for an easier install.

Re: 3cm granite backsplash
We also schedule two trips. Templating the splash upon installation, but on stones with a lot of movement (calacatta etc...) we pre cut the splash (a little large) and make reference marks on the slab to ensure that all veining matches up. When templating be sure to account for stone thickness at all corner joints, and use the corners to your advantage by leaving lots of room so that none of the pieces are really tight between three walls. Also make sure all joints are cut perfectly square as a verticle joint even slightly out of square is VERY noticeable.
