No good way to get a backing plate behind it (standoffs). If you lag into that stump (which is now dying) your lags bolts will come out in a relatively short lifecycle (1-2 yrs). The stump wont grow around them while it decays.

I've talked to the customer and she does not want glass. I think you guys are right and we should make a steel plate. Here is my plan for the plate. What do you think?

I would make the steel plate about 3" smaller than the stone top you are going to put on it. Less of a chance of tipping off or relying on the silicone to hold it steady when someone decides to sit on it. Never want to have the glue in a situation like this be the only thing that keeps someone from getting really hurt.
Also, I would go with a much longer and larger diameter screws into the stump. 1" is not enough.
1/4" diameter bolt can be a good size if they are longer.
For the washers, the wood is going to compress under the weight of the table top so I would use some larger fender washers to help distribute the weight.

Good call on the longer bolts and fender washers. A larger plate wouldn't hurt.
